I’ve never really thought about blogging, but maybe it will be a way to share my adventure and changes with cooking with those who may benefit or enjoy the creative ideas.

In April of 2012 I self-diagnosed that gluten was causing me issues of fatigue, muscle aches, and brain fog over the past 2 years.  It was a relief to finally figure that out!

Now the challenge of cooking gluten-free has caused me to question other things in my diet like the amount of dairy and sugar.  I figured out and accepted at the end of 2013 that I indeed had to be dairy-free (the blood tests showed it, but it was hard to accept!).  Thus while I am not vegan, I am cutting out beef and dairy because they don’t agree with me.  I sadly have had to give up oats (don’t seem to work well for me either) and because I’m on the healthier side of eating, I’ve given up non-refined sugar.  I’m also experimenting these days in 2014 with cutting out soy and eggs.  Jury is still out on that,  but it’s nice to know there are work-arounds for those things.

I hope these recipes are an inspiration as well as a way to still enjoy food in a healthier way!

I really still love snacks, even with my new diet restrictions, so hence, this will tend to be a more snack-related blog, but that could change!  We shall see….
